Beef Chipsteak (also known as chipped steak, shaved steak, or sizzle steak) is an ultra-thinly sliced cut of beef. Unlike the brisket or bottom round, it is defined more by its preparation than a specific muscle, as it is created by freezing a lean cut—usually the top round or sirloin tip—and slicing it into paper-thin sheets.

Key Characteristics

  • Flavor & Texture: It has a mild, clean beefy flavor and a "melt-in-your-mouth" texture. Because the slices are only about 1/16" thick, the tough muscle fibers are mechanically broken down, making it much more tender than the roast it originated from.
  • Speed: It is the fastest-cooking beef option available, often browning in as little as 60 to 90 seconds per side

Best Cooking Methods

Since Chipsteak is so thin, it requires high heat and very little time to prevent it from drying out or becoming rubbery. 

  • Skillet Searing: Heat a lightly oiled skillet to medium-high. Add the steak in a single layer; it will brown almost instantly. Use a spatula to "chop" or break it into smaller pieces for sandwich filling.
  • Garlic Butter Basting: Sear the steak quickly in olive oil, then add butter and minced garlic at the very end to create a rich sauce that coats the thin ribbons of meat.
  • Pro Tip: Do not overcrowd the pan. Cooking in small batches ensures the meat sears rather than steams, maintaining its tender texture.
