Crispy Fried Squash Blossoms

Directions


The Batter:

1 cup flour

1 cup cornstarch

2 eggs

2 cups cold club soda

Instructions:

Mix: In a bowl, combine the flour and cornstarch. Make a well in the center and add the 2 eggs. Begin whisking while slowly adding the cold club soda until the batter is smooth and the lumps are gone.

Coat: Gently dip your squash blossoms into the batter, coating both sides.

Fry: Carefully place them in heated fry oil at 375°F. Fry until both sides are a beautiful golden brown. Barbie Beiler likes to use Coconut Oil as fry oil!

Drain & Season: Lay them on paper towels to drain excess oil, then season immediately as you like (a sprinkle of sea salt works wonders!).To Serve: Dip them in your favorite sauce, or drizzle it right over the top!
